THIS IS OMAR
All chefs know: you can’t have a successful restaurant without a great dishwasher. It’s a true statement, and it’s also where most chefs get their start.
Omar’s first day with Heavy was July 4th, 2006, as part of the opening team of Purple Café & Wine Bar Seattle. He was 16. He was washing dishes as the culinary team ran around the kitchen, testing recipes and trying to figure out how to make it all work. Fast forward a couple years; Omar had moved from light prep work to pastry prep to making sauces and soups. Eventually, Omar was leading the prep team, in charge of ordering and processing all product purchased for the restaurant. (Arguably the most important position in a kitchen second to the dishwasher.)
Jump to 2016 when we opened Meet the Moon—it was Omar running around the kitchen testing recipes and figuring out how to make it all work.
Today Omar is our Executive Chef of three of our restaurants. (Meet the Moon, Barrio, Pablo y Pablo – Wallingford.)
